5 Step Easy Yeastless Bread Recipe [Perfect For Beginners]

There’s nothing more frustrating than discovering you’re fresh out of yeast (okay, well, there are many more frustrating things…like not being able to find a decent yeastless bread recipe!). Today, we’re sharing with you our tried and tested yeastless bread recipe that’s so delicious you’ll be asking for seconds.

This recipe is super easy to make with only 5 small steps, and only takes 45 minutes to make from start to finish. It has a crusty exterior and a chewy, but fairly light texture.

We baked this loaf and topped it with some butter and jam for a sweet treat, but it makes a great sandwich bread too if that’s what you intend to use it for.

If you’re on the hunt for a traditional, rustic bread recipe that uses only common kitchen ingredients, this is the recipe for you. Let’s jump right in.

Prep Time

5 Minutes

Cook Time

40 Minutes

Ingredients & Materials Needed

– 2 cups of self-raising flour (Don’t have self-raising flour? We’ll show you how to make your own below)

– 2 whole eggs

– 3/4 cup of water

– A pinch of salt

– 2 tablespoons of oil

– 1 cup of oats

– Mixing Bowl

– Wooden Spoon (For Mixing)

– Loaf Tin

Important Note Before You Start Baking

As this is a yeastless recipe, you’ll want to use the freshest of ingredients to help it ‘rise’. If your self-raising flour is old, the baking powder in it will be old too, and your bread may turn out flatter than you had hoped. Leavening agents are good for about 6 months on a shelf.

For the best results, use as close to fresh ingredients as you can get. When in doubt about the freshness of your ingredients, add an extra 1/2 teaspoon of baking powder to the recipe.

How to Make Self-Raising Flour if You Don’t Have Any

Thanks to Nigella Lawson’s easy step-by-step instructions, it’s easy to make your own self-raising flour at home.

Simply add 2 teaspoons of baking powder for each 150g/6oz/1 cup plain flour. Sift the flour and baking powder together into a bowl before using, to make sure the baking powder is thoroughly distributed.

Bonus Tip From Nigella: If you are ever baking with cocoa, yogurt or buttermilk then add 1/4 teaspoon bicarbonate of soda (baking soda) as well as the baking powder as generally these ingredients need a little extra leavening boost. This recipe doesn’t require this though.

5 Easy-to-Follow Instructions to Make This Delicious Yeastless Bread

1. In a mixing bowl, mix all of the ingredients together, except the oats.

2. Once the dough is sticking together, roll it vigorously in the oats. You will want to do this on a lightly floured surface.

3. Lightly grease and flour a loaf tin.

4. Place the dough mixture into the tin and gently press the dough down (but don’t squash it).

5. Preheat the oven for 3 minutes at 190 C (375 F). Bake the loaf at this temperature for 40 minutes.
